Who thought a guilty pleasure would be chicken and rice? Sounds crazy right? But this is a really really good chicken and rice. This recipe comes from my grandmas kitchen, where deliciously unhealthy food is born. The recipe is odd to say the least, but man its a hit. Great for potlucks, family dinner, get togethers or if you want to eat half the pan by yourself( or you eat the whole pan, this is a judgment free zone).
Here Is What You Need
1/2 Cup of Milk
2 Cups Cooked Rice
1 Can of Cream of Chicken
1/2 Cup of Margarine
1/3 Cup of Onion
2 1/2 Cups of Chopped Broccoli
1/2 Cup of Cheese Whiz (this is the best part)
8 by 8 casserole Pan

Step 1- The first thing you want to do is cook the 2 cups of rice. We start with the rice mainly because it takes soooo long to cook. Step 2. Put the 1/3 cup of chopped onions in a large frying pan, along with the 1/2 cup of butter and saute. Than around this time I would Preheat your oven at 350 degrees.

Step 3. While your onions are sauteing, put 1 cup of water in a medium sauce pan. Than ad the 2 1/2 cups of broccoli and boil for 6-8 minutes.
DO NOT DRAIN!

Step 4. When the onions turn a golden brown add the 1 CAN CREAM OF CHICKEN, 1/2 MILK, 1/2 CUP OF CHEESE WHIZ. Mix well on low heat. The mixture should go from pic 1 to pic 2. It will kind of look like chip dip.
Step 5. When the rice is done, add to the onion mixture. Add slowly. I made the mistake of adding it in one go….Took me 10 minutes to stir it without creating a HUGE mess and I still ended up spilling. So add rice one scoop at a time.

Step 6. In the casserole pan add the onion mixture and broccoli and mix, carefully.

Step 7. Put the casserole in the oven for 25 minutes. Should come out golden yellow with top slightly crispy. Cool for 5-10 minutes and ENJOY!!!
